Passover Recipes for Young Families


MATZAH PIZZA

1 matzah square per pizza
2 Tbsp. tomato or pizza sauce
4 Tbsp. shredded mozzarella cheese
Prepare the matzah square by spooning on the sauce and adding the cheese. Place on a foil covered baking sheet and bake at 400 for 5-10 minutes, until cheese melts.

MOCK OATMEAL COOKIES

¾ cup sugar
½ tsp. cinnamon
1 cup matzah farfel
½ cup raisins
2 eggs
1 cup matzah meal
1/3 cup oil
Mix and bake at 350 for 15 minutes until done.

PASSOVER APRICOT BARS

1 cup oil
1 egg
1 cup sugar
2 cups matza cake meal
1 teaspoon vanilla
Apricot jam
Oil a 9X13 baking dish. Combine all the ingredients except the jam and spread three quarters of the dough on the bottom and sides of the baking dish. Bake for 20 minutes at 325. Remove from oven. Spread a layer of apricot jam over the baked dough. Crumble the remaining dough over the top. Bake for another 30-35 minutes.
